Basil Chickpea Salad Dressing with Zucchini Cabbage Salad
This salad dressing is made from the abundant fresh basil in our garden. It takes only a minute to mix together and is super delicious!
Basil Chickpea Salad Dressing
-3 cups fresh basil leaves
-1.5 cups chickpeas
-1/4 cup nutritional yeast
-1 tablespoon gluten-free tamari
-3 cloves of garlic, minced
-1 tsp olive oil(optional)
-1/4 cup-1/2 cup vegetable broth (depending on desired thickness)
Place ingredients into a food processor and mix until smooth and creamy. Done!
This dressing pairs delightfully with your garden vegetables. I used it to dress my salad made of red cabbage, shaved zucchini, asparagus, yellow pepper, tomatoes, pistachios, and shallots.

ReplyDeleteSo I made this last night. I didn't have fresh basil and I couldn't wait to go to the store, so I used dried basil and some fresh kale. It was very good! Thanks for sharing!
