Tibs is an Ethiopian dish made up of cubed beef or lamb..not exactly vegan-friendly. Luckily, I had remembered that there is a recipe for Mushroom Tibs in Appetite for Reduction! Any Ethiopian dish created by Isa is definitely worth making.
Since I don't eat tofu or tempeh, I was really happy that mushrooms were used in place of the cubed meat(because, seriously, that's just disgusting). Rather than sauteed, the mushrooms are coated with a spice mixture of cardamon, cayenne, cloves, cumin, curry powder, garlic, ginger, paprika, thyme, and salt, and then baked. It was super fast and simple to throw together. And, of course, the tibs were delicious. I really appreciated the addition of thyme to the spice mix, which although isn't necessarily a traditional Ethiopian flavor, was a much needed respite from the additional heat the dish packed. Once again, this dish is much spicier than anything I am accustomed to making or eating, but the mushrooms really hold their ground well being slathered with lots of spice.
