Chocolate "V" Cupcakes with Thick Vanilla Frosting

Just like most couples, Dayv and I have developed several traditions over time.  One of our most favorite traditions is watching V For Vendetta every fifth of November.  We originally saw the movie in the theater in 2006(time flies!), and ever since have been celebrating Guy Fawkes Day by watching it every year.  Dayv even dressed up as "V" for Halloween a few years ago, memorized his speech from the beginning of the movie, and recited it to everyone at the party we attended.  We're pretty hardcore about it ;)

We often have some friends over every November 5th for the occasion, and this year was no exception.  I decided to bake cupcakes and decorate them with a simple chocolate chip "V" on top.  Everyone at our get together really enjoyed them, some even going back for a second.  And who can resist a perfectly soft and sweet chocolate cupcake with thick vanilla frosting topped with chocolate chips??  No one I know(except myself, but I'm a weirdo).


Chocolate "V" Cupcakes
adapted from Cakes 'n' Bakes
makes 12 cupcakes

dry:
1/2 cup sorghum flour
1/4 cup teff flour
1/4 cup potato starch
1/2 cup cocoa powder
3/4 tsp baking soda
1/2 tsp baking powder
1/2 tsp xanthan gum
1/4 tsp salt

wet:
1 tbsp apple cider vinegar + unsweetened almond milk to equal 1 cup, allow to sit for 5 minutes
3/4 cup vegan granulated sugar
1/3 cup sunflower oil
1 1/2 tsp vanilla extract

Preheat oven to 350 and line a standard cupcake pan with 12 muffin liners.

Combine all of the dry ingredients in a medium sized bowl and whisk together until the mixture is uniform in color.

In a large bowl, combine all of the wet ingredients.  Using a hand mixer, beat the ingredients together until completely combined.  Slowly add in the dry ingredients, and mix thoroughly until a thick, smooth batter is reached.

Equally spoon batter into the cupcake liners.  Bake in preheated oven for 20 minutes.

After the cupcakes are done baking, remove from oven and, as soon as they have cooled off a bit, transfer to a wire rack to cool completely.

Frost with thick vanilla frosting.

Thick Vanilla Frosting
1/2 cup Earth Balance, cold
1/2 tsp vanilla extract
1 tbsp almond milk
2 1/2 cups powdered sugar

In a large bowl, cream together Earth Balance, vanilla extract, and almond milk.  Add in the powdered sugar, a 1/2 cup at a time, until a very thick frosting is made.  Be sure to scrape down the sides of the bowl if necessary.  Transfer to a piping bag and get frosting!  Add chocolate chips on top if desired ;)

  5. thanks christine ;) i realized i needed to cram in as much powdered sugar as possible to make frosting that wouldn't melt..an issue i've ALWAYS struggled with. finally, perfect icing was created ;)
