Homemade "Sunshine" Burgers


When I was getting ready to prepare dinner a couple of weeks ago, I had to break it to Dayv that all of the Sunshine Burgers were gone.  He had been enjoying them every evening and they disappeared quickly considering that each container only contains three burgers.  I quickly glanced at the ingredients and realized I had all of the ingredients on hand to make my own version! 

An hour later, my homemade "Sunshine" burgers were created.  Dayv loved them.  How much did he love them, though?  So much that when I asked him yesterday if he wanted me to buy more Sunshine Burgers, he said, "Nah..I like yours better."

These burgers are super tasty and so healthy.  They are made purely from brown rice, sunflower seeds, carrots, and garlic. No added oil.  Also, my upstairs neighbor texted me while I was baking them to say that whatever I was making smelled amazing.  So there's that, too :)

Homemade "Sunshine" Burgers
makes three patties 
1/4 cup of uncooked brown rice
1/2 cup filtered water
1/2 cup sunflower seeds
1/4 cup carrots, shredded(you can do this in your food processor before processing the sunflower seeds)
1 clove of garlic
1/2 tsp salt

Rinse rice.  In a small saucepan, bring water to boil.  Add rice, cover, and cook according to directions.  When rice is done cooking, set aside. 

Preheat oven to 400.  Line a baking sheet with parchment paper.
 
Using your food processor, pulse sunflower seeds about 10 times, just enough to break the kernels up.  Add brown rice, carrots, garlic and salt.  Alternate between pulsing and processing every 10 seconds until mixture begins to clump together.  The key is that you want to keep the texture, but they also need to hold together.

Form mixture into patties(according to Dayv, the patties should be as flat as possible so you can pile on the toppings).  Place on prepared baking sheet and bake in preheated oven for 20 minutes, flipping after 10 minutes.  Remove from oven and serve immediately(maybe like this)!  Wrap any leftovers in aluminum foil and store in the freezer for later.  Enjoy ;)

  3. I've never tried a Sunshine burger but now I really want to try your version - they really do remind me of a pocket of sunshine :) I like how easy they sound too!

    i havent had a sunshine burger before.. i like the look of these! those orange carrots peaking here and there.. makes the texture look so good!

  6. These look perfect. I've been finding that the veggie burgers I make with sweet potatoes or lentils are a bit too mushy for me. These sunshine burgers look like they'd have a really good, grainy texture and hold up well. And I bet they are super delicious! :) Thanks for sharing!

Can I tell you how excited I am to try these...i always wondered why only 3 came to a pack of the sunshine burgers, it never made much sense to me- now I can make as many as I want with your recipe, I think I may also try the southwestern ones jby adding some spce as those are justins favorite - thank you for creating this recipe!

  11. This sounds interesting, though I've never had Sunshine Burgers. Something I have to ask, though....how many burgers does this really make? When I copied and pasted the recipe so I could print it off, the "makes 9 patties" at the top became "makes 3 patties" when I pasted it!! What in the world?? I looked at the ingredients and began to wonder. It doesn't seem like enough to make 9, but more than for just 3. Which is it, please?

  12. These sound delicious! Have you ever tried making them with quinoa? They're a little more difficult, but still taste great. Cannot wait to try them with brown rice, though - I just bought a 20 pound bag, which means I might be making a lot of these bad boys!

      and a 20 lb bag of brown rice sounds insane..i wanna see a pic of you standing next to it ;)

  14. Thank you for posting this! I am trying to do more vegetarian type meals for me and my family but I cannot find sunshine burgers near me without paying an arm and leg for them! Added plus that these are wheat free! (think small town = fewer quality choices.) Will be making these soon.

  16. Sunshine burgers are my favorite because they're made of wholesome ingredients that I can actually pronounce. So awesome that you made a homemade version, they look delicious and just like the real thing! :-)

  17. I am going to make these burgers with brown jasmin rice, a long grain rice that just needs 25 minutes of cooking time. Do you think this type of rice isn't too 'loose', so not sticky enough to make the burgers?
    I am very curious if these burgers won't taste a bit bland because no spices are used, that is, except the salt and the flavor of the garlic.

    1. yvonne, i don't have any experience with jasmine rice, so i'm not sure how they would work out. i used long grain brown rice, though.

      i didn't add additional spices/herbs because i wanted to stick as closely to the ingredients of sunshine burgers as possible. i didn't think they tasted bland, but you could always add a dash of your favorite spices/herbs if you want. good luck!

  21. I just made this and my blender started blowing smoke in the middle! So it was half-blended mush and we ate it that way. It looked kind of funny but it tasted amazing! and so simple and healthy! I am going to make this again as soon as I get a new blender. keep up the great work!

  23. I cook in a cafe that focuses on Gluten free, Organic, and vegan food. I probably make 10 veggie/garden/sunshine burgers a day, yet had never tried one (I'm not Gluten free or vegan.) They just always kind of looked unappealing. My family decided to do "meatless mondays" (my dad is more carnivore than omnivore) and I stumbled upon this recipe and they actually looked good!

    I made them today and they are killer! Next time I would carmalize a little onion in it but everything else is great! I'm going to try to convince my boss to let us make our patties instead of buy them now. So quick to make, and who wouldn't rather have something made by hand than bought from a box? Thanks so much for the recipe!

  25. Wow, these look and sound delicious! I am trying to eat less meat, and I always found veggie burgers to be unappealing...and though I haven't even heard of Sunshine burgers, I'm definitely going to try this recipe. Could these be grilled instead of baked?

  26. So glad I finally tried these! I've still never tried the original Sunshine burger, but now that I have your recipe, I don't need to anyway :)
    Loved the crunchy texture and how they didn't turn out mushy like a lot of other veggie burgers. It was hard not to just eat all of the mixture up before baking them!
