One Pot Quinoa & Kale
I'm a gal on the go. Most weeknights consist of me rushing home from work, making separate dinners for me and Dayv(because even though we're both gluten-free vegans, we enjoy two completely different types of meals), cleaning the kitchen in under 5 minutes, and then rushing off to the gym for one of the many classes I take.
Why am I telling you this? Because, I am always trying to find different ways to make dinner preparation faster. Recently, when I was getting ready to make quinoa, I was also trying to figure out a way to lightly cook my kale. I couldn't add it into my normal stir-fry because I had decided to roast my veggies instead. I threw the kale in with my quinoa, and poof! my new favorite side dish was created.
One Pot Quinoa & Kale
serves one as a side & can easily be doubled, tripled, quadrupled..
1/2 cup vegetable broth
1/4 cup uncooked quinoa, rinsed
2 leaves of kale, rinsed and torn into pieces
1-2 cloves of garlic, sliced
tamari, to taste
In a small pot over high heat, bring vegetable broth to boil. Add quinoa, kale, and garlic, and stir until all ingredients have been submerged in the vegetable broth(they don't necessarily have to stay submerged, it's just important that they are no longer dry). Cover and reduce heat to low. Cook for 20 minutes. Removed from heat, plate, and drizzle with tamari. Enjoy!

DeleteWoah.. 2 separate meals.. thats a lot of work!:) i love one pot meals.. takes the pain out of cooking up a whole 3-4 dish meal everyday:) and who can sa no to quinoa and kale!
ReplyDeletein the beginning it was a lot of work, but luckily i've gotten used to it after over a year and a half of doing it. i LOVE one pot meals, too, especially this one ;)

DeleteI love simple recipes like this where just a few seasonings are enough! I've never tried quinoa with tamari... something new to try!

My hubby is an omni and he's allergic to a lot of the things I eat- like fruit and nuts- and because we have different tastes too, it just work better to make separate meals. ReplyDeleteSounds easy and flavorful - I love one pot meals too! And people always think its strange that my sister and I cook separate meals every night even though we live together...I have to explain that we just both like to cook in our own different styles!

Delete5 minute clean-up time has to do with the fact that i do my prep dishes/utensils/etc WHILE i am making dinner and ALWAYS clean the counters before eating. so, after dinner, i just have to wash the dishes the food was on and and dishes that were directly used to prepare the meal(pots/cast iron skillet/etc). that's my secret!
Busy lady! I've been thinking about taking some yoga classes but I don't really have much time at all. Especially lately! I've been working 10 hour shifts every day of the week, on top of class! AH!

I also throw my kale into my quinoa when I don't have time to steam it (which is my preferred way). Easy peasy! Kale and quinoa is a powerful duo.

This is awesome! I make a toasted quinoa bowl (jam packed with veggies) and throwing in a little kale is a great idea. And I think it's kind of adorable you make two separate meals for you and Dayv. Seriously, adorable.

DeleteI made this the other night and added a sauce of tahini, sesame oil, tamari, agave, ginger powder and minced garlic. it was delicious and nutritious. One pot meals are the BEST.
