Chocolate Covered Strawberries Smoothie

One of the things that brings me the greatest amount of happiness is when my non-veg*n friends and family tell me about their vegan creations in the kitchen.  No matter what it is- a vegan pizza, salad, or smoothie, it makes me smile from ear to ear to know they are swapping a meal otherwise filled with animal-based ingredients to one that is cruelty-free, and they are sharing their achievements with me!  Keep 'em coming, you guys ;)

Recently, my friend Heidi texted me that she was excited because she had just gone to the grocery store and bought lots of fruits and veggies.  Later that evening, she told me about a smoothie she made with various fruit, almond milk(!!!this makes me especially excited since this girl loves dairy), and chocolate chips.  Whhhhat?  Chocolate chips in a smoothie??  I applauded her creativity.

Last week, Dayv came down with a vicious stomach virus.  For about 4 days, he could barely eat anything, which worried me slightly since he can't really afford to lose any weight.  Everyday, he would ask me to make him his usual smoothie, which I would gladly do, and add an extra heaping tablespoon of peanut butter for extra fat and protein.

Once day, I was getting all of the ingredients together and realized I didn't have anymore frozen blueberries.  What was I supposed to do?  I had frozen strawberries, but Dayv doesn't like strawberries in his smoothies(don't ask me why).  But, I was forced to improvise.  I remembered Heidi's chocolate chip addition and decided to give it a try.

Placing it in front of Dayv, I had no idea what his reaction would be.  He loved it.  According to him, it tastes more like a milkshake and that strawberries and chocolate go perfectly together.  Later, I texted Heidi to tell her her chocolate chip smoothie was a hit with Dayv.  Her response" "Everybody loves chocolate!"  True dat, sister.

Chocolate Covered Strawberries Smoothie
makes one large smoothie
1 1/2 cups frozen strawberries
3 tbsp vegan chocolate chips
1 heaping tbsp almond butter
3/4-1 cup unsweetened vanilla almond milk

Place all ingredients in a blender.  Blend until thick and smooth.  Serve immediately.

  2. What a great idea! It sounds amazing! Like you, I love it when my non-vegan friends and family tell me about a vegan meal that they made. Every time that we demystify what "vegan food" looks like and people are inspired to make a meal free of animal products, that's a good thing!

  14. I love smoothies thick enough to eat with a spoon, and this looks like it would fit right into that category! The texture of the crunchy chocolate chips are just an added bonus. It's like a whole [sweet] meal in a glass!
