Cream Cheese Potato Soup
Just about every Sunday, I spend an hour or two in the kitchen preparing Dayv's lunch for the upcoming work week. Over the course of the last two years it has changed quite a bit, starting out as a banana with peanut butter and a few cookies, to hummus with tortilla chips and baby carrots. Lately, though, he's very much been on a soup kick. Dayv prefers thick chowder-like soups with potatoes as the main component. Luckily, I'm always coming across more soups that fit this description.
This past week, I made Manifest Vegan's Cream Cheese Potato Soup. The only modification I made was to use four cups of vegetable broth rather than eight, since Dayv likes thick, hearty soups. I loved how easy it was to prepare. Also, Dayv enjoyed it, which is always a plus since he has to eat it all week.
After preparing Dayv's lunch soup every week, I divide it evenly between five microwave-safe containers. That way, they are ready to be packed every night for the next day. Dayv enjoys lunch with tortilla chips that he breaks apart and puts into his soup, like crackers. I also pack a salt shaker, which is actually one of my recycled spice jars complete with the plastic top that has the little holes in it.

Yum! That's the kind of soup I'd happily eat for five days. I'm always so happy when I individually portion out lunches for the week. It's one less step in the morning to just move it into a lunch bag. It's those little things that make the morning a bit easier!

DeleteThat is so sweet that you pack in a salt shaker:) this is such a perfect soup for right now. we just started up the heater yesterday, first time after summer.
ReplyDeleteyou know hubbs doesnt like carrying a lunchbox, whatever i make. In the last year he has put in requests for foods at the work cafeteria and they have added a bunch of things to their already decent vegan collection. plus its seattle, lots of vegan options keep popping up every month.
wow, your husband is soooo lucky. dayv can literally eat NOTHING in his cafeteria. NOTHING.
Deleteluckily we haven't had to put our heater on yet. we try to hold off until november.
they do clean the equipment when they cook for anyone requesting specific diet restrictions, but there have been times when vivek found a real cheese shred or cream in his dressing etc. i can imagine how difficult it must be to avoid contamination with gluten. it is crazy cold here the last few days. i am wrapping chewie on me to keep warm:)
DeleteI wish that Jeff would let me make him lunches like this! But he loves his cafeteria at work because there is meat and no prep involved for him, other than serving himself. Le sigh ...

he can eat the same thing for a little bit, but he does get bored quickly. me, i could have the same meal plan for the rest of my life ;)

thanks, gigi! i ALWAYS am cutting broth for him, usually in half. otherwise he deems it inedible because it's too brothy ;) the crumbled tortillas were all dayv's idea. he's definitely gotten creative with his food ;)

DeleteThis is such a great idea, I do the same for my lunch, often cooking up a big batch of something which I can then eat for the rest of the week. I'll have to try this soup next, I need to use GGFVE more!

DeleteI love it when I get a chance to pack lunches for Chris, but he's usually out and about and sometimes has to meet people for lunch or what not. Plus, he takes the opportunity to go eat at vegan restaurants all over the city. Which makes me jealous. But I digress...
