Grilled Cheese with Tomato and Pickles

A couple of weeks ago, Dayv and I began brainstorming grilled cheese ideas while I made dinner.  It was then that I remembered that as a child, my mom would make grilled cheese with tomato and I absolutely loved it.  In fact, it was the only way I could eat it, as plain grilled cheese didn't sit well in my stomach.  Then, Dayv threw out the idea of adding pickles.  It seemed a little weird to me, but we decided to go for it.  And wouldn't you know, we loved it!

I figured that this type of sandwich wouldn't interest anyone but the two of us, until I told my mom about it later that week.  "I'd love pickles in a grilled cheese!" she said.  I have to say, I was a little astonished at her reaction.  I seriously thought this was a weird combination.  But, the thing is, it works.  And besides the taste, my favorite thing about it is that it only takes about 10 minutes to make.  You can't beat that, especially if you need to feed a hungry husband.


Grilled Cheese with Tomatoes and Pickles
makes one, easily doubled, tripled...
2 pieces of gluten-free bread(or regular if you can eat the stuff)
approximately 1/4 cup vegan cheese(we used Teese mozzarella)
1 thin slice of tomato
6-8 bread and butter pickle slices(we used Bubbies)
Earth Balance

Place the bread side by side on a plate, and sprinkle evenly with cheese.  Microwave for 30 seconds, or until cheese is melted.  On one slice, place the sliced tomato on top of the cheese.  On the other piece, place the pickles in one layer on the cheese.

Place a piece of Earth Balance in the center of a small skillet and turn to medium heat.  Place the piece of bread with the pickles on it, pickles side up, in the center of the skillet(on top of the Earth Balance).  Carefully place the other piece of bread, tomato side down, on top of the pickles.  Cook for approximately 5 minutes, or until lightly browned.  Carefully flip, and cook an additional 5 minutes.  Remove from heat.  Enjoy!

  3. I used to eat grilled cheese as a child with tomato b/c I liked it better than plain. The addition of pickles sounds perfect! All of my favorite sandwiches contain pickles!

  5. yeah! I LOVE tomatoes in my grilled cheese, and I can see that pickles would be a good contribution too. In fact, I'm planning on grilled cheesies with tomatoes for dinner tomorrow night!

  6. I have never put pickles on grilled cheese, but now I'm intrigued. I always eat grilled cheese with green olives, which sounds equally strange but is somehow just very good!

  8. I love tomatoes on grilled cheese! Pickles are another story... :) I think maybe I'd have avocado on mine!

  9. I have always added pickles and tomatoes but I add onions and a bit of ketchup, too! I know some people think this is a terrible combination but it is my version of a "Patty Melt" without the "Patty"!

  12. Oh, yummy! My 2 year old and I love pickles! Wish we could use this cheese, but we have to have soy-free as well. Hooray for Daiya :) xx

  14. Yum! I've never had pickles in a grilled cheese sandwich, but I do enjoy topping crackers with pickles and cheese. The salty sourness totally works with the rich cheese. In my dairy-eating days, I always had cream of tomato soup with grilled cheese. I should try revisiting a veganized version of that combo!

  16. You just opened up a whole new world to me. Pickles in a grilled cheese! I need to try that out as well as a variety of other things: relish, sauerkraut, kim chee, capers... Oh the list goes on an on. I am so inspired right now! :-)

  18. I loved tomato & grilled chees samies, my mom would also add in mustard and ham once in a while - I still make a tomato and grilled cheeze samie....justtin prefers tempeh bacon and tomato in his grilled cheeze :)

  19. my mama's grilled cheese sandwiches were always stuffed with big slices of tomato and thin slices of onion - still a winning combo here. and of course a big fat kosher dill on the side! such comfort food...
