Single Serving Blueberry Crumble

Most weekends, I make pancakes for breakfast.  Occasionally, I like to get a little fancy.  This past Sunday, I had all the intentions of getting out my expensive Belgian waffle maker and putting it to good use.  But something happened in my brain on Sunday morning, between leaving to go grocery shopping and returning home.  I came home and declared to Dayv, "I'm going to make something a little fancy for breakfast!"  He looked at me, bewildered, and said, "Ok."

There's just something about blueberry crumbles that I love.  I think it's because blueberries are one of the healthiest fruits out there, packed to the brim with vitamins and antioxidants.  They are used to make a potentially light dessert, but are oftentimes laden with sugar and fat.  Not this one, though.  With minimal sugar and fat, it's perfect for when you want to indulge just a little bit without feeling gross.

This blueberry crumble is lightly sweetened and therefore makes a fantastic breakfast for days when you want to get a little fancy.  It also doubles as a light dessert and would be perfect with a scoop of vanilla ice cream on top for added indulgence.

Be sure to figure out ahead of time how much blueberry filling will fit in the container you are using.  Half or double the filling accordingly.  I probably could have gotten away with doubling the recipe, but didn't want to have any mishaps while handling the hot container fresh from the oven.


Single Serving Blueberry Crumble
-1/2 c frozen blueberries
-1/2 tsp lemon juice
-1 tsp vegan sugar
-1/2 tsp arrowroot starch
-2 tbsp gluten-free oats
-2 tbsp chopped walnuts
-1 tsp almond flour
-1/8 tsp cinnamon
-1 tsp Earth Balance, melted
-mini chocolate chips (optional)

Preheat oven to 350.  In a small bowl, toss together blueberries and lemon juice.  Add sugar and arrowroot starch and toss until blueberries are evenly coated.  Transfer blueberry mixture to a small oven-safe container.

Mix together oats, walnus, almond flour, and cinnamon.  Pour in Earth Balance and toss together until mixture becomes crumbly.  Scoop over blueberry mixture.  Sprinkle on mini chocolate chips, if desired.

Place in preheated oven for 10-13 minutes, then carefully remove from oven.  Enjoy!

  2. This recipe looks and sounds so good!! I love that there's a minimal amount of sugar and that it's just a single serving. I'm often hesitant to make desserts, because I don't want to feel like I either have to finish off a whole bunch of sugary deliciousness or let food go to waste. This sounds like a wonderfully cozy breakfast!
