Broccoli and arugula soup from It's All Good | Admittedly, I am not a fan of arugula and had a mostly full bag of the stuff left over from last week.  I made this soup to use up the rest of the leafy green, not really expecting much.  But, oh my gosh, is this soup delicious!  It reminds me so much of cream of broccoli soup, despite the fact that there is nothing in this recipe that in any way resembles cream.  I also love the addition of black pepper, which I very rarely use, which gives it a bit of a kick.  I would totally make this recipe every week for the rest of my life.  It's really that good.

Double cheese lasagna from VegNews | This recipe has rave reviews, and I love the fact that there is no tofu, despite the fact that it is "double cheese".  As you can see, my lasagna came out significantly thinner than the VegNews photo.  I used cashew nuts instead of macadamias for one of the cheeses, and jarred tomato sauce instead of homemade.  Regardless of it not being very attractive, it smells amazing right out of the oven, and tastes even better.  Next time, I will make it in my 8x8 casserole dish to make it thicker, like my lasagna with cashew crema and pesto.

  1. We have been sampling a lot of soup this winter at my house. I will have to give the broccoli and arugula soup a try. Have you heard about the cookbook called "Plum: Gratifying Vegan Dishes from Seattle's Plum Bistro?" I made the Cauliflower Bisque with Fresh Fennel and it was delicious!

    1. i have heard of that cookbook, but somehow didn't realize it was vegan! i definitely have to check it out sometime since it has your approval ;)
