Curried pumpkin and lentil soup from A House in the Hills | As soon as Sarah posted this recipe, I knew I had to make it immediately.  The soup is perfect for a week night because of how simple it is to prepare.  However, it really benefits from a night in the fridge to really thicken up and allow all the flavors to meld together.  I added a couple handfuls of baby spinach, but in the future I'd add more vegetables, since I prefer veggie packed soups.


Taco fiesta potato crisps from The Oh She Glows Cookbook | This is Dayv's new favorite dish.  It consists of potato slices topped with walnut taco meat, cashew sour cream, and salsa.  I also add shredded lettuce, avocado, and tomato, and it becomes a big nacho plate, but with potatoes instead!  I also love this recipe because even though there are several elements, it is really easy to prepare.  It has definitely become a rotating favorite in our home.

  1. They both look great. I'd be tempted to be lazy and just serve all those taco fiesta fillings on top of a baked potato but the little crisps are so cute :)
    For some reason when I first saw the picture I saw jam, coconut cream and cookie crumbles!

  2. Oh, man! I've been meaning to make those taco crisps ever since I cracked open OSG for the first time. I already enjoy loaded potato skins (with cashew cream, onions, and coconut bacon), I know I'd love taco skins. Good to know that it is a hit in your home!
